For me one of the differences between a home and a house is definitely food. Home-made family meals from fresh ingredients, filling the house with a warm lovely smell, welcoming tired family members coming back from work or school. And there is nothing I would love more than smell of apples and cinnamon.
This recipe is not mine. But it is so loved I want to share it. Basically I baked the pie in the evening before the bed time and in the morning there were only two tiny bits left. When I came to England, the first ever present I was given was a cook book of course! And nothing else than a British cook book! British Baking by Paul Hollywood. I am guilty of only trying two recipes yet, but both of them where celebrated as a good ones!
- 200 g plain flour
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 100 g unsalted butter, diced
- 100 g caster sugar
- 2 eating apples, peeled, cored and thinly sliced
- 1 small cooking apple, peeled, cored and thinly sliced
(I really just use whatever apples I have handy, 3-4 depending on size)
- 2 large eggs
- 60 ml milk
- 1 tbs demerara sugar
How to? Just mix caster sugar, cinnamon, baking powder, butter and flour together with your hand until the mixture “resembles fine breadcrumbs”. Beat the eggs lightly with the milk and than combine everything together with apples. And you´re done!
Transfer into a cake tin. I always butter it a little and than stick baking paper into it. Sprinkle the top with demerara sugar which will give you nice “caramel-like” crunchy surface. 180°C about 50 min. Just dig into it a little and you will see, every oven works and heats a bit different. Easy and super delicious!! I am giving you my word, you will love it.
